POSITION:  SALAD COOK – Salad Station / Ensaladera (Experienced Only)
DEPARTMENT: Kitchen
REPORTS TO: Executive Chef
Full-Time | Fine Dining | High-Volume Service
About the Position
Gianni’s at the Villa Casa Casuarina is seeking an experienced Salad Cook (Ensaladera) to join our high-volume, fine-dining kitchen. This is not an entry-level role. Our line regularly handles 500–800 covers in a single night, and we need cooks who can execute with speed, precision, and consistency.
Responsibilities
  • Set up and maintain a fully stocked and organized salad/cold station.
  • Prepare salads, cold appetizers, dressings, and garnishes quickly and consistently.
  • Prep vegetables, lettuces, fruits, herbs, and station items with precision.
  • Assemble dishes at high speed during service while maintaining presentation standards.
  • Keep excellent mise en place, rotation, and station cleanliness.
  • Follow all food-safety and HACCP procedures.
  • Assist with prep for daily service and large events.
  • Communicate clearly with the line and expo during service.
Requirements
  • Minimum 1 year of experience in a salad station or cold station (fine dining or high-volume preferred).
  • Ability to work extremely fast and organized under pressure.
  • Strong knife skills and prep efficiency.
  • High attention to detail and plating presentation.
  • Evening, weekend, and holiday availability is required.
  • Legal authorization to work in the U.S.
